Ok, so we have no life and so that is why all my posts are recipes and not fun and exciting stuff. And for all those that really know me, no I did not decide I like to cook. In fact, I still despise it. But, a girls gotta do what a girls gotta do. So, I find recipes that are easy peasy and that have enough ingredients in them to make the hubs a happy little camper and figure there are others out there that feel the same way. And with that, I will share.
cube and cook about 1 lbs of chicken (I cut mine into little little pieces and use a little more than a lb. b/c I cut out all the ligaments and gross stuff off the breasts)
1 yellow onion (other colors work too but yellow really tastes the best)
8 oz of sour cream (i use reduced fat or fat free)
1 can of cream of chicken soup (i used reduced sodium)
2-3 tbs. of curry (k there is a redish curry and a yellowish curry, for this dish we both decided the yellow one is the best)
Salt and pepper to taste (I don't use salt, I don't think it needs it)

Set oven to 350 degrees
I cook the chicken in a pan with minimal olive oil. Then I set the chicken aside and clean out the pan. Then I saute sliced onion in minimal olive oil, when soft I add the sour cream, cream of chicken, and curry powder, when all mixed together I add the chicken and stir well.
Pour into a greased casserole dish and bake for 30 minutes. If you have a rice cooker start cooking your rice now.
Serve over rice and eat with naan bread.
We have been experiencing with the naan bread (found at a middle eastern market) Pictured is the wheat one. We have yet to find some that we don't like. You do need to experiment with the cooking times though, they under estimate it on every single package and brand we have bought!
